What makes Tellicherry peppercorns different from regular black pepper?
Tellicherry is a size and quality grade, not a different plant. The berries are left on the vine longer to grow larger and riper, which concentrates the aromatic oils. The result is a bigger corn with sweet, citrusy, piney notes on top of the heat, where ordinary pepper reads as flat and one-dimensional.
